This Green Granola Breakfast Bowl is my favorite healthy breakfast when I’m on the go and I need a good start of the day to keep me energized. It gets its blue-green color from spirulina, a type of freshwater algae with really strong detoxifying properties. Spirulina is a great source of iron, it’s high in plant-based protein and loaded with vitamins. I like adding it to my smoothies, breakfast bowls and sometimes I even use it in raw desserts like superfood chocolate truffles. Excited to give it a try?

Green Granola Breakfast Bowl

SERVES: 1 person

EQUIPMENT: bowl or mason jar (to take your breakfast with you on the go)

INGREDIENTS:

1 cup non-dairy milk, unsweetened (I used rice coconut milk)
½ to 1 teaspoon spirulina, to taste
½ cup of cooked amaranth (or quinoa)
1 handful of blueberries, fresh or frozen and thawed (or other fruit)
1 large dollop coconut yogurt
1 small handful of granola (I used ALL GOOD power breakfast muesli granola)

DIRECTIONS:

1. Mix the milk with the spirulina in a bowl or a closed jar.
2. Serve the spirulina milk with the amaranth, a handful of blueberries, a nice dollop of coconut yogurt and a sprinkle of your favorite granola.

JULIE’S TIPS & TRICKS:

• This green granola breakfast bowl will stay fresh for at least 2 days in an airtight container in the refrigerator. I like to prepare several servings at once in separate containers and add the granola in the morning so it stays nice and crunchy.
• Feel free to get creative with this spirulina smoothie bowl. You can use quinoa, buckwheat or oats instead of amaranth; replace the granola with a handful of nuts or seeds; or try a dollop of nut butter instead of coconut yogurt.
