ALL GOOD Tortilla Chips with Guacamole & Tomato Salsa

 

 

Time for a celebration! Simon and I recently launched ALL GOOD – the first homemade raw vegan product line in Belgium ☺ We offer healthy snack boxes that are filled with sweet and savory treats such as Crunchy Cinnamon Granola, Banana Oatmeal Cookies and these Mexican Tortilla Chips. These chips are made with organic corn, red bell pepper, cumin, flax seed and more delicious ingredients. I love serving them as a quick appetizer or a late-night snack with fresh Guacamole and Tomato Salsa. This way, they are crunchy, sweet, spicy and creamy all at the same time!

Tortilla Chips with Guacamole & Tomato Salsa

SERVES: 2 people (as a snack or appetizer)

EQUIPMENT: 2 mixing bowls

INGREDIENTS:

Guacamole

2 ripe avocados, pitted
1 ½ tablespoon of freshly squeezed lime juice
½ tablespoon of extra virgin olive oil (optional, for extra flavor)
¼ teaspoon of Himalayan crystal salt or sea salt
1/8 teaspoon of ground cumin (optional, omit this if you don’t like the taste)
Cayenne pepper, to taste Freshly ground black pepper, to taste
2 tablespoons of fresh cilantro, finely chopped
2 tablespoons of spring onion, finely chopped

Tomato Salsa

3 cups of tomato, seeded and finely chopped
½ cup of red bell pepper, seeded and finely chopped (optional)
2 tablespoons of fresh cilantro, finely chopped
2 tablespoons of red onion, minced (or spring onion)
2 tablespoons of freshly squeezed lime juice
1 tablespoon of extra virgin olive oil (optional, for extra flavor)
1 teaspoon of maple syrup (optional, or any other liquid sweetener of your choice)
½ teaspoon of Himalayan crystal salt or sea salt
1/8 teaspoon of cayenne pepper (or fresh/dried chili, seeded)

DIRECTIONS:

Guacamole

  1. Scoop the avocado out of the skin with a spoon into a mixing bowl. Mash the avocado with a fork until slightly chunky.
  2. Add lime juice, olive oil, salt, cumin, cayenne pepper en black pepper. Stir well with a spoon. 
  3. Finally, add the finely chopped cilantro and spring onion. Mix well.

Tomato Salsa

  1. Put your finely chopped tomatoes, red bell pepper, cilantro and red onion in a mixing bowl. Stir well.
  2. Add lime juice, olive oil, maple syrup, salt and cayenne pepper. Stir again until well combined.
  3. Serve the guacamole and tomato salsa with your favorite brand of tortilla chips.

JULIE’S TIPS & TRICKS:

  • The guacamole and tomato salsa are best served fresh. If you have any leftovers, they will stay fresh for at least 1 day in an airtight container in the refrigerator.
  • Fresh cilantro is incredibly detoxifying and nourishing to your body. If you’re not a huge fan of the particular flavor, you can replace it with other fresh herbs such as basil or parsley.

Hi Julie,

Your recipes are fantastic! I would like to do all of them if I had time. As a Raw Vegan I am always searching for snack recipes and you mentioned pop corn and potatoe chips but I still haven't found a raw version for these snacks. Maybe you could create it :-)

I would also like to know if you prepared the tortilla chips as well, didn't you? If so, would you please share the recipe? ? Many many thanks in advance and much success for you!
