Creamy Cilantro Avocado Dressing

Cilantro is the queen of detox land! It is one of the most powerful detoxifying herbs with strong anti-inflammatory properties. Cilantro helps us to burn excess fat cells and remove toxic heavy metals such as mercury, arsenic and lead from our body. These heavy metals can cause chronic fatigue, weight gain and even arthritis. Enough reasons to give this Creamy Cilantro Avocado Dressing a try! 

Creamy Cilantro Avocado Dressing

SERVES: 2 people (or 1 very hungry person!)

EQUIPMENT: blender

INGREDIENTS:

1 large avocado, pitted
½ cup zucchini, peeled and roughly chopped (this will thicken the dressing without adding additional fat)
6 tablespoons of water
¼ cup of cilantro, packed
2 tablespoons of green onion
Juice from 1 lime
3 small dates, pitted and roughly chopped
¼ teaspoon of Himalayan crystal salt or sea salt
¼ teaspoon of freshly ground black pepper
1 large pinch of chili powder (or cayenne pepper)

DIRECTIONS:

Add avocado, zucchini, water, cilantro, green onion, lime juice, dates, salt, black pepper en chili powder to the blender. Blend until smooth.

JULIE’S TIPS & TRICKS:

  • This creamy cilantro avocado dressing will stay fresh in an airtight container in the refrigerator for at least 3 days. If you add enough lime juice, the avocado won’t turn dark that quickly either.
  • Serve this creamy cilantro avocado dressing over a simple mixed salad with leafy greens, red bell pepper, cucumber and tomato. I love combining it with finely chopped fresh black olives too!
