I’ve got a special treat in store for you today… We are going to be making fresh ice cream that is completely free from dairy, eggs & refined sugars, it will be ready in less than 5 minutes and you don’t even need an ice cream machine! How cool is that? This Banana Split with Chocolate Fudge Sauce is actually a combination of Banana Split and ‘Dame Blanche’, which is made with vanilla ice cream and hot chocolate sauce. It’s the most popular ice cream sundae here in Belgium!

Banana Split with Chocolate Fudge Sauce

SERVES: 2 people

EQUIPMENT: food processor, rubber spatula, small mixing bowl, ice cream scoop (optional)

INGREDIENTS:

Chocolate Fudge Sauce

2 tablespoons of maple syrup
2 tablespoons of cacao powder, unsweetened (or more if you prefer dark chocolate flavor)
1 teaspoon of water (or more to taste)
½ teaspoon of pure vanilla extract
1 large pinch of Himalayan crystal salt or sea salt (optional, for flavor balance)

Banana Ice Cream

4 ripe bananas, peeled and frozen
2 tablespoons of almond milk (optional, for extra creaminess)
1/8 teaspoon of vanilla powder

Banana Split

2 ripe bananas, cut into half 1 small handful of pecans, finely chopped Fresh cherries, for garnish

DIRECTIONS

Chocolate Fudge Sauce 

  1. Combine maple syrup, cacao powder, water, vanilla extract and salt in a small mixing bowl. Stir well with a spoon or whisk.
  2. Add more water or some almond milk if the chocolate fudge sauce is too thick to drizzle on top of your banana ice cream sundae.

Banana Ice Cream 

  1. Cut your frozen bananas in smaller chunks with a sharp knife (you can do this before freezing them too).
  2. Add the frozen banana chunks to your food processor fitted with an S-blade. Process for about a minute.
  3. Stop the food processor and scrape down the sides with your rubber spatula.
  4. Keep mixing until your bananas start to turn into ice cream.
  5. Now add the almond milk and vanilla powder, and process again until well combined.
  6. If your ice cream is too soft by now, put it in the freezer for a few minutes until it’s firm enough to your liking.

Banana Split

  1. Take a nice serving bowl and put your fresh banana slices at the bottom.
  2. Scoop some banana ice cream on top.
  3. Add as much chocolate fudge sauce as you desire.
  4. Top the ice cream sundae with some finely chopped pecans and a cherry.

JULIE’S TIPS & TRICKS

  • This Chocolate Fudge Sauce will stay fresh for at least 2 weeks in an airtight container in the refrigerator.
  • Always make sure your bananas are nice and ripe before your freeze them, otherwise your ice cream just won’t be as creamy and sweet. The more brown spots they have, the better!
