Cacao Maca Banana Ice Cream

SERVES: 1-2 people (I could eat the whole thing ☺)

EQUIPMENT: food processor, rubber spatula

INGREDIENTS:

4 medium ripe frozen bananas (freeze them without the peel)
1 tablespoon of cacao nibs (or more to taste)
1 tablespoon of Maca powder
¼ teaspoon of pure vanilla extract
1 large pinch of Himalayan crystal salt or sea salt (optional)

DIRECTIONS:

  1. Place the frozen bananas in the food processor fitted with an S-blade. Process until finely chopped.
  2. Add cacao nibs, Maca powder, vanilla extract and salt. Process again until all the ingredients are well combined into a thick, luscious ice cream.
  3. Top with extra cacao nibs and goji berries. Or garnish with warm chocolate sauce and slices of fresh banana.

JULIE’S TIPS & TRICKS:

If you are trying to avoid cacao, you can replace the cacao nibs with carob chocolate chips. Carob doesn’t have that traditional bitter chocolaty taste, but it is a great substitute if you get too nervous from eating cacao. Just use this chocolate chip recipe and replace the cacao with carob powder. Then mix in the carob chocolate chips by hand after you’ve made the banana maca ice cream.
