Romaine Lettuce Wraps with Italian Sundried Tomato Spread

SERVES: 6 large wraps

EQUIPMENT: food processor, rubber spatula

INGREDIENTS:

Italian Sundried Tomato Spread (+/- 1 ½ cup)

1 ½ cup of sunflower seeds 
½ cup of sundried tomato, finely chopped
1 tablespoon of lemon juice
½ tablespoon of tamari (gluten free soy sauce)
½ tablespoon of sweet ‘Shiro’ miso
1 teaspoon of dried oregano (or other Italian herbs)
2 large pinches of cayenne pepper

Romaine Lettuce Wraps

6 large Romaine lettuce leaves
3 large carrots, shredded
1 large cucumber, finely sliced
6 large mushrooms, finely sliced
Sprouts, to taste
Avocado, to taste

DIRECTIONS:

Italian Sundried Tomato Spread

  1. Place the sunflower seeds in a food processor fitted with an S-blade and process until finely ground.
  2. Add sundried tomato, lemon juice, tamari, miso, oregano and cayenne pepper. Mix until well combined.

Romaine Lettuce Wraps 

  1. Fill each Romaine lettuce leaf with a layer of Italian Sundried Tomato Spread.
  2. Top with carrots, cucumber, mushrooms, sprouts and avocado to taste.

This Italian Sundried Tomato Spread will stay fresh for at least 1 week in an airtight container in the refrigerator.
