Fish with Red Pesto & Tomato

Ingredients

  • 400 g white fish fillet
  • 500 g vine or cherry tomatoes
  • 4 tablespoons red pesto
  • 2 tablespoons extra virgin olive oil
  • Black pepper
  • Basil

What better way to enjoy a sunny day than with this easy keto meal: Fish with Red Pesto and Tomato, a recipe from my new book Low Carb on a Budget

The recipe truly couldn’t be easier to make, with just 3 main ingredients. Replace the red pesto with green pesto or olive tapenade for a fun flavor variation. It tastes amazing whichever way you prepare it: in the oven, on the barbecue or grill, or in a large frying pan.

Use local fish that is in season depending on where you live: hake, sea bass, cod, red snapper… If you’re a vegetable lover like me, feel free to add extra vegetables to the oven dish such as zucchini, fennel, bell pepper or onion. The fish with pesto tastes amazing with green beans or sugar snaps too, or just a large mixed salad during summertime.

Quick keto meal: Fish with red pesto and tomato, from my book Low Carb on a Budget (gluten free, dairy free, low carb)

DIRECTIONS:

  1. Pre-heat the oven (or air fryer) to 350°F (175°C).
  2. Place the fish in an oven-proof dish and coat each fillet with a big spoonful of red pesto. Arrange the tomatoes in the oven dish too and drizzle everything with olive oil.
  3. Bake for 10 minutes or longer in the pre-heated oven, until the fish is cooked enough to your liking.
  4. Garnish with freshly ground black pepper and fresh basil.

JULIE’S TIPS & TRICKS:

  • You can also prepare this dish in a large frying pan on the stove.
