Spicy Mediterranean Avocado Salsa

A friend of mine inspired me to create this quick & easy recipe for Spicy Mediterranean Avocado Salsa. He has a really busy schedule but still manages to prepare fresh raw vegan meals every single day – usually with a healthy dose of avocado ☺ This Spicy Mediterranean Avocado Salsa combines all five basic tastes into one satisfying dish that will definitely warm you up during these colder fall and winter months!

Spicy Mediterranean Avocado Salsa

SERVES: 1-2 people

EQUIPMENT: sharp knife, cutting board, large mixing bowl

INGREDIENTS:

1 large cucumber, finely chopped
20 cherry tomatoes, quartered
10 fresh black olives, pitted and finely chopped
2 dried figs, finely chopped
½ teaspoon of dried oregano
¼ teaspoon of black pepper
1/8 teaspoon of chili powder
1 large avocado, pitted and roughly chopped

DIRECTIONS:

  1. Combine cucumber, cherry tomato, black olives, figs, oregano, black pepper and chili powder in a large mixing bowl. Stir well with a spoon.
  2. Add the avocado and stir again.

JULIE’S TIPS & TRICKS

  • Prepare this Spicy Mediterranean Avocado Salsa as fresh as possible. It will quickly lose its taste and turn brown when you put it in the refrigerator.
  • Serve this Avocado Salsa with a large bowl of leafy greens and a side of cooked quinoa to get all your essential amino acids & minerals in one delicious meal. I like to combine it with a side of steamed sweet potato too.
