I can still remember the first time I tried a raw dessert. It was a beautiful warm sunny day and I was out in the garden enjoying some downtime with our recently born baby kittens. I had just created a gorgeous bowl of luscious chocolate mousse and I couldn’t believe how creamy the result turned out – without adding any butter, cream or eggs! This Banana Blueberry Mousse with Lime Fig Crumble has the exact same creamy texture and rich taste, all thanks to the addition of my favorite savory fruit: avocado. The dessert only takes about 10 minutes to prepare and you can easily take it with you on the go!

Banana Blueberry Mousse with Lime Fig Crumble

SERVES: 2 people

EQUIPMENT: blender, small food processor

INGREDIENTS:

Banana Blueberry Mousse

1 small of avocado
1 large ripe banana
½ cup of blueberries (or other berries of your choice)
¼ cup of green tea
1 tablespoon of lime juice (or lemon juice)

Lime Fig Crumble

½ cup of dried figs, unsweetened & roughly chopped
¼ cup of dried coconut
½ teaspoon of lime zest

Garnish

1 small handful of blueberries, fresh or frozen

DIRECTIONS:

Banana Blueberry Mousse

  1. Combine avocado, banana, blueberries, green tea and lime juice in the blender. Blend until smooth.
  2. Chill for at least 30 minutes in the refrigerator. This will allow the mousse to thicken.

Lime Fig Crumble

Combine dried figs, dried coconut and lime zest in the food processor. Mix into a fine crumble.

Garnish 

  1. Fill each glass or bowl with banana blueberry mousse.
  2. Top with lime fig crumble and blueberries.

JULIE’S TIPS & TRICKS:

  • This banana blueberry mousse will stay fresh for at least 2 days in an airtight container in the refrigerator.
  • The lime fig crumble will stay fresh for at least 3 weeks if you store it in an airtight container in the refrigerator, but it will lose some of its taste. • Don’t like blueberries? You can replace them with any berry you like.
  • Want to give this mousse a tropical twist? Replace the blueberries with mango, pineapple or banana.
