Cucumber Honeydew Salad with Sweet Mint Dressing

Remember the energizing Cucumber Honeydew Soup with Fresh Mint I prepared for you earlier? I had so much cucumber and honeydew melon left that I decided to create a refreshing summer lunch with the same ingredients: a Cucumber Honeydew Salad with Sweet Mint Dressing. This recipe couldn’t be easier to make. You don’t need any fancy equipment or hard-to-find ingredients, and you can keep it as simple as you like. Bon appétit!

Cucumber Honeydew Salad with Sweet Mint Dressing

SERVES: 2 people as a starter – 1 person as a main course

EQUIPMENT: vegetable peeler, melon baller or spoon, small + large mixing bowl

INGREDIENTS:

Sweet Mint Dressing

½ cup of honeydew melon juice
1 tablespoon of lemon juice
1 tablespoon of fresh mint, finely chopped
1 teaspoon of lemon zest (if you are using organic lemons)
¼ teaspoon of Himalayan Crystal salt or sea salt
1 large pinch of chilli powder (or more if you like it really hot)
Freshly ground black pepper to taste 

Cucumber Honeydew Salad

2 large cucumbers, peeled
½ large honeydew, peeled
6 fresh black olives, finely chopped (or more to taste)
1 small handful of pine nuts (optional)
1 small handful of Italian Herb Onion Cheese Crackers, crumbled (optional)

DIRECTIONS:

Sweet Mint Dressing

Combine honeydew melon juice, lemon juice, mint, lemon zest, salt, chilli powder and black pepper in a small mixing bowl. Mix well with a spoon or a small whisk.

Cucumber Honeydew Salad

  1. Create cucumber ribbons with a vegetable peeler. Save the seedbed as the base for a delicious juice, smoothie or soup like this juicy pineapple cucumber gazpacho or this refreshing cucumber honeydew soup with fresh mint.
  2. Use a melon baller or spoon to create small honeydew melon balls. You can just cut the melon into small cubes as well.
  3. Combine the cucumber ribbons and melon balls in a large mixing bowl. Cover with the sweet mint dressing and mix well.
  4. Serve the cucumber honeydew salad on a plate or in a bowl of your choice. Top with finely chopped black olives, pine nuts and Italian herb cheese crumble.

JULIE’S TIPS & TRICKS:

  • This cucumber honeydew salad will stay fresh for at least 2 days in an airtight container in the refrigerator.
  • Do you want to keep this salad completely fat-free? Replace the olives, pine nuts and cheese crumble with finely chopped celery for a salty flavour.
