Now that the days are getting a lot colder, I’ve been craving warming drinks and creamy shakes like this raw vegan eggnog. It’s super comforting, really rich and creamy, and it doesn’t contain any eggs, refined sugars or dairy milk. I like to make it with tons of warming spices like cinnamon, turmeric, nutmeg and black pepper. Perfect for a holiday party or cozy winter night!
Raw Vegan Eggnog
SERVES: 1 person (2 small cups)
1 cup almond milk, or other non-dairy milk
1 large ripe banana, fresh or frozen
2-3 tablespoons cashews
1-2 teaspoons maple syrup
1 large pinch Himalayan crystal salt or sea salt
Spices: vanilla powder, cinnamon, nutmeg, turmeric, black pepper, cloves, star anise…
Combine almond milk, banana, cashews, maple syrup, salt and winter spices to taste in a blender. Blend until smooth.

• This raw vegan eggnog will stay fresh for at least 2 days in an airtight container in the refrigerator.
