Raw Vegan Mini Pizzas with Almond Cashew Cheese

Plus: they are ready in just 2 minutes if you prep the almond cashew cheese in advance.

Raw Vegan Mini Pizzas with Almond Cashew Cheese

SERVES: +/- 30 appetizers

EQUIPMENT: medium-size mixing bowl, spoon, chef knife, cutting board

INGREDIENTS:

Spicy Almond Cashew Cheese

Almond Cashew Cheese
¼ teaspoon of paprika powder
1/8 teaspoon of chili powder (or more depending on how hot you like it)
A sprinkle of lemon juice (optional)

Raw Vegan Mini Pizzas

1 medium zucchini, chopped in round slices of about ¼ inch
2 large tomatoes, seeded & finely diced
Fresh basil (to taste)

DIRECTIONS:

Spicy Almond Cashew Cheese

Combine almond cashew cheese, paprika powder, chili powder and lemon juice in a medium-size mixing bowl. Stir well with a spoon or whisk. Set aside.

Raw Vegan Mini Pizzas 

  1. Chop the zucchini into round slices. These will be your pizza ‘crust’.
  2. Top each slice with a generous serving of spicy almond cashew cheese, finely diced tomato and fresh basil. Ready to serve!

JULIE’S TIPS & TRICKS:

  • This almond cashew cheese will stay fresh for at least 4 days if you store it in an airtight container in the refrigerator.
  • You can easily prepare the almond cashew cheese in advance (a few hours or even a day), but wait until the last minute to stack your appetizers. Once you put the cheese on top of the zucchini, it will start to release its moisture. You don’t want your appetizer to turn into a soggy mess, right?
  • Zucchini makes a great pizza base because it’s slightly crunchy and very neutral in flavor, but feel free to experiment with other vegetables like cucumber, carrot or parsnip as well.
  • Sprinkle some nutritional yeast on top of these appetizers for a super savory cheese flavor.
