This back-to-school breakfast is simple, quick to make, and super nutritious: Yogurt with Keto Granola and Baked Plums. It’s the perfect way to start your day full of energy!
Do you prefer to stay under the covers as long as possible in the morning but still want to enjoy a delicious breakfast? Mix your favorite yogurt with a spoonful of MCT oil, some seasonal fruit, and crunchy granola.

It also reduces sugar cravings, improves your concentration, and provides quick energy. It’s handy to take along as breakfast to school or work if you prefer to eat breakfast a little later in the morning.

Here, I’m serving the yogurt with slices of baked plum, which is in season right now. You can also opt for some red berries, apple, pear, fresh fig… whatever you like. Can’t digest dairy products? Then go for plant-based yogurt—you can easily find it at the supermarket these days. I’m crazy about unsweetened coconut yogurt.

Back-to-school Breakfast: Yogurt with Keto Granola and Baked Plums
DIRECTIONS:
- Heat a spoonful of butter or some extra virgin coconut oil in a wide pan. Slice the pitted plums and fry them until golden brown. Season to taste with a little cinnamon, vanilla, and stevia or honey, if desired.
- Mix the yogurt with the MCT oil. Top with the fried plums, granola, and, if desired, some fresh mint or lemon balm.
JULIE’S TIPS & TRICKS:
- I love unsweetened plant-based yogurt made from coconut, which is available at larger supermarkets and health food stores. You can also use Greek yogurt, skyr… if you can tolerate cow’s milk, or opt for yogurt made from goat’s or sheep’s milk.
- Start with 1 teaspoon of MCT oil and gradually increase to 3 teaspoons per person so your digestive system has time to get used to this powerful oil.
- Are you having this for breakfast after a workout? Stir 2 tablespoons of your favorite protein powder into the yogurt.
- If you want to bake your own keto granola, you can find the recipe here. You can easily make a large batch and store some in an airtight glass jar in the fridge or in a cool, dry place.
