Vegan Keto Breakfast: Strawberry Chia Pudding with Granola | Low Carb, Sugar Free, Paleo

Ingredients

  • 1 ½ cup full-fat coconut milk (1 can or fresh)
  • 2 cups strawberries, fresh or frozen and slightly thawed
  • ½ tablespoon almond butter
  • 2 pinches Himalayan crystal salt or sea salt (for flavor balance and trace minerals)
  • Keto sweetener or pure liquid stevia, to taste
  • 1 tablespoon MCT coconut oil (optional)
  • ½ cup chia seeds

Vegan Keto Granola with Peanut Butter

The granola I used today is our newest Power Peanut Keto Granola, with organic peanut butter, pumpkin seeds, sunflower seeds, hemp seeds and coconut. It’s completely sugar free, gluten free and a fantastic source of fiber. Unlike traditional granola, it’s naturally low in carbohydrates, high in healthy fats and a good source of protein. Perfect if you wish to lose weight, build strong muscles and improve your concentration and focus.

Keto Strawberry Chia Pudding + Keto Granola with Peanut Butter

Strawberry Chia Pudding with Keto Granola

DIRECTIONS:

  1. Add the coconut milk, strawberries, almond butter and salt to the blender. Sweeten with stevia or keto sweetener to taste. Blend until smooth.
  2. Optionally, you can also add a spoonful of MCT coconut oil to keep you satisfied longer and increase your mental clarity.
  3. Pour the strawberry coconut milk on top of your chia seeds in a mixing bowl and stir well. Put it in the refrigerator overnight so it has the time to thicken (the chia seeds will absorb the liquid).
  4. Right before serving, add a handful of berries and a few spoonfuls of keto granola.

JULIE’S TIPS & TRICKS:

  • This strawberry chia pudding will stay fresh for at least 5 days in an airtight container in the fridge.
  • Don’t have strawberries at home? Replace them with other berries such as blackberries, raspberries… or a mix of your favorites. Most health food stores and supermarkets sell frozen berries too so feel free to use those when fresh berries aren’t in season.

Y’all, this pudding is DELICIOUS! I just started this low carb/keto lifestyle, and I struggle with a bad sweet tooth. I did NOT add any sweetner to this recipe, nor any of the Optionsl Add-ons, nor did I add granola or berries. I substituted Wowbutter for the almond butter bc that’s what I had on hand. I did put a dollop of whipped cream (from a can) on top. It is SO good!!

It all is really delicious and fulfilling food but I followed the book for 3 weeks and ate all of the recepies like the above but not loose any weight, but only gained weight...

Hi Cathy, did you follow the exact 15-day meal plan as mentioned in 'Keto in 15 Minuten' or our 'Keto Made Easy eBook'? If you are gaining weight instead of losing weight, your body is probably having a hard time getting into ketosis. Every body is different, some get into ketosis after just 3 days, others take weeks or months to transition. You can measure this by blood/breath/ketone strips to find out how your body is responding. This will give you the exact measurements!
